When I was little, I loved the airport. The train to my terminal provided 2 minutes worth of attempts to remain standing while the vehicle moved, which could only end in bumping into a few less-amused passengers. At the terminal, the moving walkway gave my parents hope that our energy would be drained, as my brother and I ran the opposite direction, swooping and ducking amongst, again, less-amused passengers. Then there was the airplane. Free drinks, free snacks, and a free view out the window revealing thousands of feet of nothingness – a wonderful chance to invent imaginary games.
Nowadays, I’m slightly less enraptured with flying. Yes, it means I’m going somewhere, which is always exciting. But standing in line, battling security, and waiting around are slightly less fun as an “adult”. Worst of all is the food. So instead of opting for a double priced McDonald’s meal, I bring my own snacks. This can be slightly cruxey with security restrictions, but not at all impossible. So when I fly to New Jersey today for a wedding, I’ll be prepared. Here are a few of my favorite “airport snacks” – they’re security safe and easy to pack in a tupperware in your carry-on.
Bacon Wrapped Dates
Recipe from Paleo Plan
8 bacon slices, cut in half
16 large Medjool dates, pitted
1. Preheat oven to 375°F.
2. Wrap each date with a bacon slice. Secure with a toothpick if necessary.
3. Place on baking sheet and bake for 8 minutes, flip, and bake for 8 more minutes, or until bacon is crispy.
2 cups frozen edamame, shelled
1 Tbs olive oil
1/4 tsp salt
1. Preheat oven to 350°F.
2. In a medium sized bowl, cover edamame in olive oil.
3. Spread edamame evenly on pan and sprinkle with salt.
4. Bake for 15 minutes, flip, and bake for 15 more minutes, or until crispy.
